Tomates farcies (stuffed tomatoes)

I won’t lie and make it a pretty story.. I don’t think I ever liked stuffed tomatoes as a kid even though it was a typical french comfort food. My mom used to make me some amazing fresh tomatoes stuffed with tuna, hard-boiled egg and a homemade mayonnaise. I loved it and it was my kind of stuffed tomatoes 🙂

Now I am an adult and my tastes have changed. I am still difficult when it comes to meat and that is why I needed to make my own version of this not-to-be-missed French dish. My version is solely made of beef (no veal, no sausage meat) and contains flaxseed meal instead of bread.

It is a long process so I would suggest to keep it for nights when you are motivated to cook 🙂

Preparation time : 30 minutes – Cooking time : 1 hour

Ingredients :

  • 2 or 3 big tomatoes, ripe
  • 1 pack (1 lbs or 450g) of minced beef (15% fat)
  • fresh green onions
  • 1 egg
  • 1 cup (165g) flaxseed meal
  • salt, pepper, garlic powder
  • olive oil
  • White or jasmin rice

Recipe :

  • Preheat your oven at 350F (175C)
  • Take the top off your tomatoes and empty them of the meat. Keep the meat aside for later
  • Salt the inside of the tomatoes and let them disgorge on the side
  • Get your water boiling and boil your egg (6 or 7 min). Let it cool
  • Cut your onions and in a saucepan, cook them with olive oil
  • Add the minced beef and cook for 8 minutes or until the beef is fully cooked
  • Add the flaxseed meal and the diced boiled egg to your onions and beef
  • Season with pepper, salt and garlic powder
  • Mix everything well and put inside of each tomato
  • Put the top back on your tomato and dispose them on a greased oven proofed dish
  • Cook the tomatoes inside the oven for 1 hour
  • 20 minutes before the tomatoes are done, cook your rice as you like it
  • Serve your rice and tomato on a plate. Enjoy this comforting and warm dinner 🙂

I still doubt the need for a full hard boiled egg. Especially because flaxseed meal really helps getting everything together. So it’s up to you to keep it! If you don’t have flaxseed meal, you can just use Panko, or put a piece of bread in milk and shred it yourself. All these solutions work well !
